- 8 eggs
- 1 cup almond milk
- 1 heaping tbsp coconut flour
- 3 tbsp tapioca flour or starch
- ¼ tsp salt
- ¾ stick of butter or 4 tbsp ghee
- 2 sliced peaches
- shredded unsweetened coconut
- cinnamon for sprinkling
- Blend eggs, almond milk, coconut and tapioca flour, salt in blender or use a stick blender. Heat oven to 425* and melt 4 tbsp of ghee (or butter) in a large cast iron or glass 9x13 pan. Once melted add batter and cook for 20-30 minutes or until puffed up and golden brown. Add sliced peaches, unsweetened coconut shreds and maple syrup if desired.
