We usually eat fancy breakfast for dinner because honestly in the mornings I’m just not feeling it! Plus I don’t like starting my day with a sugary breakfast even if it’s Paleo! This Paleo peach topped Dutch baby turned out delish!!

Ingredients
  • 8 eggs
  • 1 cup almond milk
  • 1 heaping tbsp coconut flour
  • 3 tbsp tapioca flour or starch
  • ¼ tsp salt
  • ¾ stick of butter or 4 tbsp ghee
  • 2 sliced peaches
  • shredded unsweetened coconut
  • cinnamon for sprinkling
Instructions
  1. Blend eggs, almond milk, coconut and tapioca flour, salt in blender or use a stick blender. Heat oven to 425* and melt 4 tbsp of ghee (or butter) in a large cast iron or glass 9x13 pan. Once melted add batter and cook for 20-30 minutes or until puffed up and golden brown. Add sliced peaches, unsweetened coconut shreds and maple syrup if desired.
