This is a one pot dinner cooked in your instant pot, crock pot or oven! It doesn’t look very pretty but is tasted delish and can be definitely filed under comfort food.
While I put it into my Fiesta Crock to serve in I cooked it in my Instant Pot. I love all of my Fiesta cooking items. For more info head here!
Instant Pot Lemon and Garlic Chicken
Ingredients
- 4 tbsp ghee
- 3 tbsp of olive oil
- 5-6 cloves of crushed garlic
- juice and zest of 1 lemon
- ¼ tsp pepper
- ½ tsp salt
- 1 tsp seasoning of choice (I used TJs everyday seasoning, rosemary would be good or herbs de Provence)
- 2 lbs of boneless chicken thighs
- 1 lb red potatoes
- 1 lb green beans
- ½ cup chicken stock
- rice
Instructions
- first melt 3-4 tbsp of ghee or butter and mix with 3 tbsp of olive oil. Add 5-6 cloves of crushed garlic, juice and zest of 1 lemon, ¼ tsp pepper, ½ tsp salt and 1 tsp seasoning if choice (I used TJs everyday seasoning, rosemary would be good or herbs de Provence) next sauté your chicken thighs or breasts, add lemon and garlic mixture to chicken and add potatoes and green beans. If cooking in instant pot or crockpot add ½ cup chicken broth. Cook for 15-20 mins in instant pot and 3-4 hours on high in crockpot. Serve with cauli rice or rice of choice (optional).

Do you sauté butter, olive oil, lemon and garlic in IP? If so how long? Sauté chicken in IP with other mixture? Does the chicken go on the bottom of the pot then potatoes then beans or do they go in another order? Do you use trivet on bottom of pot? Sorry for so many questions, this will be my first recipe to cook and it looks really good. Do you cook onmanual, pressure for 15-20 mins and use quick release or natural release. Thank you for the recipe, if you could clear up my confusion I would greatly appreciate it.
