Cauliflower Rice is so easy and tasty. I love it, my husband loves it and most importantly my kids love it! I love that my family is eating veggies instead of white rice with no nutritional value. RECIPE: 1 head of cauliflower and 1 sweet potato food processed. Finely chop 1 red bell pepper. Mix with 1 tbsp avocado oil, 1 tsp salt, 1 tsp adobo seasoning (you could use oregano and garlic powder) 1/4 tsp pepper. Bake at 425* for 30 minutes stirring 3-4 times throughout baking. I love having leftovers since it goes with so many dishes.

This is hands down my FAVORITE salad dressing and everyone who tastes it is a huge fan! This is my sweet cilantro dressing and it is super simple to make. RECIPE: 5 oz avocado oil + 2-3 oz rice vinegar + 3 dates + 3/4 bunch cilantro. Blend in blender till smooth.

Mexican Lunch Bowl
This meal is perfection and I like my salads loaded with toppings…more toppings than salad ratio… I used cauliflower rice as the base, lettuce, green salsa crockpot chicken, baked sweet potato shreds, chopped red onion, red bell pepper, green olives and avocado. I made a cilantro lime dressing to go with it. This time for the dressing I combined my PALEO MAYO with some dill, lime, a bunch of cilantro and 4 tbsp of tomatillo green salsa.
