Cauliflower Rice is so easy and tasty. I love it, my husband loves it and most importantly my kids love it! I love that my family is eating veggies instead of white rice with no nutritional value. RECIPE: 1 head of cauliflower and 1 sweet potato food processed. Finely chop 1 red bell pepper. Mix with 1 tbsp avocado oil, 1 tsp salt, 1 tsp adobo seasoning (you could use oregano and garlic powder) 1/4 tsp pepper. Bake at 425* for 30 minutes stirring 3-4 times throughout baking. I love having leftovers since it goes with so many dishes.
