I am NEVER buying store bought dressings again. Homemade salad dressing is easy, fast and tastes way better. It really is so forgivable.
For Vinaigrettes: 1:1 or 2:1 oil/vinegar ratio. If I’m using a peach, orange, lemon, cilantro etc, I use 2:1 ratio of oil/vinegar. I always use avocado oil, and my vinegars of choice are Apple Cider Vinegar, rice vinegar or balsamic. If I want to add sweetness I just add 2 dates. You can use fruits or herbs for flavor. The possibilities are endless.
For EXAMPLE: the dressing for this Peach Vinaigrette is: 2 oz oil, 1 oz vinegar, 1/2 peach, 2 pitted dates. Blend in blender.

Trying to get creative with peaches since I have sooo many right now. I made a peach vinaigrette to go with this salad and it was pretty tasty. @wholefork inspired me with her bacon wrapped peaches, so I decided to make a salad out of it.
Grill seasoned chicken (I used avocado oil, TJ 21 seasons salute, and smoked paprika) salad: lettuce, caramelized onions, pecans, peaches, crumbled bacon. Dressing: 2 oz oil, 1 oz vinegar, 1/2 peach, 2 pitted dates. Blend in blender.
Mommy & Me Smoothies. Both smoothies have a base of, water, coconut milk, 1 orange, 1 c carrots, 1 c frozen mango, 1/2 c frozen strawberries. I added spinach and 1 banana to make the girls a little more sweet and healthy.
This salad is SO easy and so good. It is a family favorite from the Nordstrom Cafe recipe book, and it happened to be whole30 approved!
2 grilled chicken breasts, 1 c pesto, 1/4 c oil packed sundried tomatos, 2/3 c raisins, arugula. Some added my orange balsamic dressing to it, but it’s not necessary. Recipe HERE.
