This “pizza” gives you the same flavor and goodness as a classic BBQ Chicken pizza without the guilt.
Slice 1/4 inch thick slices of sweet potatoes. Put on pan and lightly oil both sides. Cook for 20 mins at 375* take out and flip potatoes and add BBQ sauce (Healthfest BBQ Sauce HERE) precooked chicken, red onions, pineapple and tomatoes. Optional top with mozzarella cheese) cook for another 20-30 mins. Top with cilantro.
Cilantro dressing: mix 1 c of Paleo mayo >> HERE for recipe, with the following: 2 cloves garlic, 1 tsp dill weed, 1/2 c coconut milk and 2/3 bunch of cilantro and juice of 1 lime. You could also add a couple tbsp of green salsa if you want. Blend in blender.
