The “Better than Chipotle” Bowl. When I first made it I told Peter that is was waaaay Better than Chipotle…”I could eat this everyday!” He didn’t believe me…until he tried it 😏 This bowl is so simple but soooo tasty and can be easily made whole30 with a few substitutes. YOU HAVE TO MAKE THIS, I promise it is amazing.
First you need to make the chicken marinade for the chicken thighs, you can find that recipe HERE.
Better than Chipotle Bowl
Ingredients
- 1 head Lettuce
- 2 cups Rice
- 1 can white beans
- 1/4 tss salt
- 1/4 tsp pepper
- 1/2 tsp 21 seasoning salute
- 4 tomatoes
- 1 onion
- 1 bunch cilantro
- 1 jalapeno
Dressing
- 4 oz avocado oil
- 2 oz rice vinegar
- 1 juiced lime
- 1/4 tsp smoked paprika
- 1/4 tsp tanjin or trader joes 21 seasoning salute
- 1-2 tbsp honey or 2 pitted dates use dates if whole30
Instructions
- First make the marinade and cook the chicken thighs in the Honey Lime Chicken recipe http://littlecoconutty.com/2019/03/chile-honey-lime-chicken.htmlCook rice to manufactures instructions.Make pico de gallo (or use store bought) you can pulse tomatoes, onion, cilanto, jalepeno and salt in a food processor or chop up and combine in a bowl. Season beans on stove top with salt, and trader Joe’s 21 seasoning salute. Make dressing in blender by combining all ingredients and blending together. Assemble bowls to your liking!
