This honey lime chicken is soooo good and the secret tip is toss it in its own juices after cutting it up and adding some fresh squeezed lime or Chile lime seasoning. 👌🏼This is part 1 of my “Better than Chipotle” bowl recipe. You could eat this with rice, on a taco, on a salad, in a bowl, by itself… you just need to make it because it’s freaking amazing.
The secret to making perfect chicken is not overcooking it! Here is my favorite INSTANT READ THERMOMETER you need to cook the chicken to 165 degrees and if it goes much higher it becomes dried out and chewy.
Chile Honey Lime Chicken
Ingredients
- 9 boneless chicken thighs
- 1/3 cup olive oil
- 1/4 cup honey omit if whole30
- 1 1/2 tbsp Chile powder
- 1/2 tbsp smoked paprika
- 2 cloves garlic
- 1 juice lime
- 3/4 tsp salt
- 1/4 tsp pepper
Instructions
- Mix ingredients. Marinate for at least 1 hour. Grill on medium high until 165 degrees. Cut up chicken and toss in its own juices, add a little Chile lime seasoning (like tanjin or TJs Chile Lime) or fresh squeezed lime.
