Better than Chipotle Bowl

Ingredients
  

  • 1 head Lettuce
  • 2 cups Rice
  • 1 can white beans
  • 1/4 tss salt
  • 1/4 tsp pepper
  • 1/2 tsp 21 seasoning salute
  • 4 tomatoes
  • 1 onion
  • 1 bunch cilantro
  • 1 jalapeno

Dressing

  • 4 oz avocado oil
  • 2 oz rice vinegar
  • 1 juiced lime
  • 1/4 tsp smoked paprika
  • 1/4 tsp tanjin or trader joes 21 seasoning salute
  • 1-2 tbsp honey or 2 pitted dates use dates if whole30

Instructions
 

  • First make the marinade and cook the chicken thighs in the Honey Lime Chicken recipe http://littlecoconutty.com/2019/03/chile-honey-lime-chicken.html
    Cook rice to manufactures instructions.
    Make pico de gallo (or use store bought) you can pulse tomatoes, onion, cilanto, jalepeno and salt in a food processor or chop up and combine in a bowl. Season beans on stove top with salt, and trader Joe's 21 seasoning salute. Make dressing in blender by combining all ingredients and blending together. Assemble bowls to your liking!
