Sometimes it is hard coming up with new breakfast healthy breakfast ideas in the morning because if you are anything like me you are too tired to be creative and just scramble up some eggs! This is super easy to use with some left over shredded meat that you have from last nights dinner! You can even chop everything up before hand and just throw it together. OR you can just eat it for dinner!!

It is soooo much easier and perfect for making Paleo Mayo because you don’t have to worry about eating raw egg since it’s been pasturized.

I’ve listed some of my favorite crockpot/instant pot shredded meat recipes below to use in your recipe.
- 4 Chino Valley Ranchers Organic eggs
- Shredded meat of choice (optional)
- 1 diced tomato
- cilantro
- 1 avocado
- 1 sweet potato
- salt and pepper
- avocado oil
- First spiralize your sweet potato and cook in skillet with tsp of avocado oil and salt and pepper. Cook till soft. Next heat up your left over shredded meat. Chop up tomato, cilantro, and avocado. Whisk together eggs and cook in a skillet. Add all of your fillings.
