I live for Tortilla soup! It is soooo easy to swap out ingredients to make it fit your dietary needs. Saying no to beans? Add quinoa or sweet potatoes. Saying no to corn? Add more beans or tomatoes or green chilies! Don’t have an instant pot? Use a crock pot or the stove. EASY I tell ya!

Ingredients
- 6 cups chicken broth
- 1 can of tomato sauce
- 3 chicken breasts
- 2 cans of great northwestern beans
- 1-2 cans corn
- ½ tsp pepper
- 1 tbsp Chile powder
- 1 tsp smoked paprika
- ⅛ tsp cayenne pepper
- 1 tsp cumin
- 1 tsp oregano
- 1 diced onion
- cilantro
- lime
- avocado
- green onion
Instructions
- First sauté onion in some olive oil on Instant Pot or on stove. Add all ingredients and cook for 40 minutes manual pressure. If using crockpot cook for 4 hours on high. Once done shred chicken and salt to taste. Garnish with cilantro, limes, avocado and green onions.
