Paleo Mexican Beef bowls are where its at! I have been setting you guys up to make this recipe with my last posts about cauliflower rice and the sweet cilantro dressing. This meal was soooo good my husband said it is definitely on the repeat list.
RECIPE: First I crockpotted a beef round with water, onion, 21 seasoning salute, adobo seasoning and salt and pepper, carrots and potatoes. We ate the traditional roast for dinner the first night and I used the left over beef for this. Simply layer rice with beef and add fresh topping like tomato, green onions, avocado and cilantro. Top with the sweet cilantro dressing (see few posts back). It was good…oh so very good.
