I love a good stir fry. I usually have all the ingredients on hand, it is very quick to throw together and if I want to add some protein I can throw in some chicken or steak! You can also use whatever rice you want, if you are on whole30/paleo use this simple cauliflower rice recipe HERE, quinoa is a great option and then traditional rice is good too! It is hard to find a teriyaki or soy sauce that is gluten free AND paleo so the next best thing is Coconut Aminos. I made this really yummy “teriyaki” sauce with ginger and lime coming through that is so refreshing. This is my new go to stir fry recipe! I hope you like it!
- 1 cup of quinoa or cauliflower rice
- ½ c broccoli
- 2 chopped carrots
- 1½ c green beans
- 3 oz avocado oil
- 2 tbsp avocado or olive oil
- 2 tbsp apple cider vinegar
- 3 oz coconut aminos
- 1 pitted date
- 1½ tsp fresh grated ginger
- 1 clove minced garlic
- 1 cup chopped cabbage
- ½ lime
- First cook quinoa in chicken broth or sub cauli rice if on whole30/Paleo. Then steam 1½ c broccoli, 2 chopped carrots and 1½ c green beans steam till slightly tender not over cooked. Mean while mix in blender: 3 oz avocado oil, 2 tbsp apple cider vinegar, 3 oz coconut amines, 1 pitted date and 1½ tsp fresh grated ginger. In a pan add 2 tbsp of oil and sauté 1 clove minced garlic and add 1 cup chopped cabbage, Cook for 1 min then add steamed veggies and ginger sauce and cook for 3 mins till hot. Serve over rice of choice! Squeeze on fresh lime and serve!
