Have you guys tried a Kabocha Squash? It’s like a cross between a sweet potato and a pumpkin which equals delicious! I picked mine up from trader joes and loosely followed the recipe on the sticker to come up with this recipe. It is more starchy than a traditional squash so it gives an interesting texture and the flavor is amazing. Next time you see one of these you should pick one up at the store!
The bacon with the lemon zest and the balsamic takes this dish over the top!
Roasted Kabocha

Serves: 4 servings
Ingredients
- 1 Kabocha Squash
- salt
- 3 slices of bacon
- ½ yellow onion
- 1 lemon
- balsamic vinegar/ or glaze
Instructions
- Cut up and deseed squash into slivers or cubes and lightly oil and salt, bake at 400* for 30-40 mins flipping halfway. Chop up squash into cubes with skin on or off. Cook up some bacon in a pan, in same bacon fat cook up half a yellow onion. Mix squash, bacon and onion together and garnish with lemon zest and balsamic vinegar or glaze.
