Roasted Kabocha

Ingredients
  • 1 Kabocha Squash
  • salt
  • 3 slices of bacon
  • ½ yellow onion
  • 1 lemon
  • balsamic vinegar/ or glaze
Instructions
  1. Cut up and deseed squash into slivers or cubes and lightly oil and salt, bake at 400* for 30-40 mins flipping halfway. Chop up squash into cubes with skin on or off. Cook up some bacon in a pan, in same bacon fat cook up half a yellow onion. Mix squash, bacon and onion together and garnish with lemon zest and balsamic vinegar or glaze.
