I love peach season especially since I have a peach tree in my backyard. We are bombarded with 100’s of peaches within a couple of weeks so I have to get creative with using them up! I love this peach salad because of the added protein and the dressing is AMAZING!! You have to try it!
Peach Pistachio Salad

Ingredients
- 2-3 grilled chicken breast
- Trader Joe’s everyday seasoning (or seasoning of choice)
- 1 tomato
- 2 peaches
- spring mix
- ½ cup pistachios
- 1 cup cooked quinoa (optional)
- DRESSING
- 3 oz of avocado oil
- 2 tbsp coconut white balsamic vinegar (mountaintown olive oil) OR 1-2 oz of rice vinegar
- Juice and zest of 1-2 clementines
- 1 pitted date or 1 tsp honey
Instructions
- First cook your quinoa. Grill seasoned chicken and cut up, add all other salad mix-ins of choice.
- For the dressing blend all the ingredients together in the blender.
