Peach Pistachio Salad

Ingredients
  • 2-3 grilled chicken breast
  • Trader Joe’s everyday seasoning (or seasoning of choice)
  • 1 tomato
  • 2 peaches
  • spring mix
  • ½ cup pistachios
  • 1 cup cooked quinoa (optional)
  • DRESSING
  • 3 oz of avocado oil
  • 2 tbsp coconut white balsamic vinegar (mountaintown olive oil) OR 1-2 oz of rice vinegar
  • Juice and zest of 1-2 clementines
  • 1 pitted date or 1 tsp honey
Instructions
  1. First cook your quinoa. Grill seasoned chicken and cut up, add all other salad mix-ins of choice.
  2. For the dressing blend all the ingredients together in the blender.
