I was craving a healthy treat this beautiful fall afternoon so I whipped together this apple cake with fresh green roasted apple streusel and coconut maple glaze. It turned out so good and melted in my mouth! I used Silver Fern Brand Cinnamon Apple Muffin mix because it only has 1g of sugar! That is incredible! It’s such a healthier option. The ingredients that I added to it are all gluten free and dairy free so this treat is perfect for family members with food restrictions. I am lactose intolerant so the less dairy the better!
Perfect Fall Coconut Apple Cake

Ingredients
- CAKE
- 1 pkg of Silver Fern Apple Cinnamon Muffins
- 3 eggs
- ½ cup apple sauce
- APPLE STREUSEL
- 1 Granny Smith apple diced
- ⅓ cup gluten free quick oats
- 2 tbsp butter or ghee
- 1 tsp pumpkin pie spice or apple pie spice
- 1-2 tbsp maple syrup
- COCONUT GLAZE
- 1 cup canned coconut milk
- 2 tbsp maple syrup
- 1 tsp tapioca starch
Instructions
- First cut up apple and add to a frying pan and cook with butter on medium heat for 5 minutes add oats and syrup and cook the remained of baking time or until apples are soft.
- Mix all ingredients together for the apple cinnamon muffins using the recipe and instructions on the box. Pour into a greased 9x9 or 7x11 baking pan. Cook at 375 for 17-22 minutes until done.
- Meanwhile cook coconut milk and maple syrup in a sauce pan. When the cake is almost done cooking add 1 tsp (optional) of tapioca starch to thicken it up.
- Pour apple streusel over the top of the cake and lastly add the coconut glaze.
