This shredded pork on its own is amazing but with the sweet cilantro lime dressing on top of a salad it is over the top! The secret ingredient to my shredded pork is Maya flavored CRIO BRU (it is roasted coco beans) it just adds an amazing depth of flavor!
After dinner my husband was eating the pork straight out of the crock pot and liking the salad dressing off a spoon. I am telling you this meal was extremely easy yet amazing.
Shredded Pork Salad

Ingredients
- For the Pork:
- 5 slices of bacon
- 2-3 lbs pork roast
- 1 tbsp salt
- 1 tbsp may crio bru
- 4 cloves garlic
- For the Salad:
- lettuce
- tomatoes
- avocado
- yellow pepper
- cilantro
- ½ lime juice
- 2 dates
- 4 oz avocado oil
- 2 oz rice vinegar
Instructions
- First grind your crio bru in a food processor (you might have to grind a lot more than 1 tbsp) Add all of the pork ingredients to a crock pot and cook on high for 5-6 hours.
- Chop up your lettuce and add avocado, tomatoes and yellow pepper and put into a bowl. Combine remainder of ingredients and blend in blender. If it needs to be sweeter add another date.
- Add pork to salad and tope with dressing.
