First grind your crio bru in a food processor (you might have to grind a lot more than 1 tbsp) Add all of the pork ingredients to a crock pot and cook on high for 5-6 hours.
Chop up your lettuce and add avocado, tomatoes and yellow pepper and put into a bowl. Combine remainder of ingredients and blend in blender. If it needs to be sweeter add another date.
Add pork to salad and tope with dressing.
