Shredded Pork Salad

Ingredients
  • For the Pork:
  • 5 slices of bacon
  • 2-3 lbs pork roast
  • 1 tbsp salt
  • 1 tbsp may crio bru
  • 4 cloves garlic
  • For the Salad:
  • lettuce
  • tomatoes
  • avocado
  • yellow pepper
  • cilantro
  • ½ lime juice
  • 2 dates
  • 4 oz avocado oil
  • 2 oz rice vinegar
Instructions
  1. First grind your crio bru in a food processor (you might have to grind a lot more than 1 tbsp) Add all of the pork ingredients to a crock pot and cook on high for 5-6 hours.
  2. Chop up your lettuce and add avocado, tomatoes and yellow pepper and put into a bowl. Combine remainder of ingredients and blend in blender. If it needs to be sweeter add another date.
  3. Add pork to salad and tope with dressing.
