Carrot Salad

This salad with spiralized carrots has the perfect crunch to it and I’m pretty sure I can hear angels sing when I first tasted the ginger tangerine dressing! Sometimes it is hard for me to get in all my veggies but if I have an amazing dressing poured over the top of it I’m all in. I honestly want to drink the dressing, it is light, refreshing and oh so flavorful. Have I painted a picture for you yet? Simple, delicious and fresh is what you get with this easy salad.

Serves: 2 servings
  • 2 large carrots spiralized
  • 1 cup of baby kale
  • lemon juice
  • 1 sweet orange pepper
  • 2 green onions
  • handful of sliced almonds
  • Cilantro
  • 2 oz avocado oil
  • zest from 1 tangerine
  • Juice from one tangerine
  • ⅛ tsp salt
  • Pepper
  • Splash rice vinegar
  • 1-2 tsp grated ginger
  1. First massage kale in juice from lemon for 5 minutes (this takes out the bitterness) then combine with kale, chopped bell pepper, 2 green onions, sliced almonds and cilantro. Add the rest of the ingredients to a blender and blend until combined. Add to salad and enjoy.
