This salad with spiralized carrots has the perfect crunch to it and I’m pretty sure I can hear angels sing when I first tasted the ginger tangerine dressing! Sometimes it is hard for me to get in all my veggies but if I have an amazing dressing poured over the top of it I’m all in. I honestly want to drink the dressing, it is light, refreshing and oh so flavorful. Have I painted a picture for you yet? Simple, delicious and fresh is what you get with this easy salad.
Carrot Crunch Salad

Serves: 2 servings
Ingredients
- 2 large carrots spiralized
- 1 cup of baby kale
- lemon juice
- 1 sweet orange pepper
- 2 green onions
- handful of sliced almonds
- Cilantro
- 2 oz avocado oil
- zest from 1 tangerine
- Juice from one tangerine
- ⅛ tsp salt
- Pepper
- Splash rice vinegar
- 1-2 tsp grated ginger
Instructions
- First massage kale in juice from lemon for 5 minutes (this takes out the bitterness) then combine with kale, chopped bell pepper, 2 green onions, sliced almonds and cilantro. Add the rest of the ingredients to a blender and blend until combined. Add to salad and enjoy.
