Let’s call this “lazy caprese salad” because it seriously took me less than 5 minutes to throw together.
RECIPE: Cherry tomatoes, fresh mozzarella cheese (you know it’s fresh when it’s watery and soft, 1 scoop of pesto from Costco and drizzle of balsamic glaze from trader joes.
To make paleo/whole30 subtract the cheese, make your own pesto or just basil leaves and use oil and balsamic vinegar. Simple and delicious is my motto for summer lunches.
