Holy YUM! These baked banana egg white pancakes hit the spot and definitely had a more traditional pancake texture than my Paleo German pancakes.
RECIPE: 2 eggs plus 7 egg whites, 1 ripe banana, 1/8 c maple syrup (optional) 1 tbsp coconut flour. Blend in blender. Cook at 375* in greased pan or cast iron skillet for 25-30 mins. The last 5 mins I threw some frozen berries on top. Serve as is or with some more maple syrup…. I get a little out of control when I’m eating Paleo.
