The Southern California girl in me LOVES Mexican food, so I thought I would really miss beans on the whole30, turns out I was wrong and my belly thanked me. These fajitas are such a great whole30 meal and really hit the spot!
1/8 c Avo oil, 1/3 apple cider vinegar, Zest of 1 lime, juice of 1 lime, 1/4 c juice of 1 orange, 1/2 c water, 3 cloves garlic minced, 1tsp salt, 1 tsp cumin, 1 tsp chipotle chile powder, 1/2 tsp pepper, chopped cilantro. Mix together and marinate steak for at least 3 hours. I added my yellow peppers to the marinade for 30 mins before grilling. Grill steaks, peppers and red onions, put in a lettuce wrap and enjoy!
