This is a staple! I make it at least once a week and I may or may not lick the bowl to get every last taste of goodness! My 2 and 4 year olds even love this stuff and it’s so versatile you can add grapes, tomatoes, pears, celery, curry powder, raisins….and this list goes on. You will love it and eat all of it!
Paleo Almond Chicken Salad

Ingredients
- ALMOND CHICKEN SALAD
- 2 lbs shredded chicken (canned or cooked)
- 5 chopped green onions
- Juice from half a lemon
- salt and pepper
- paleo mayo
- 1 cup almonds
- apple, avocado, sweet pepper or lettuce for the boat.
- PALEO MAYO
- 1 egg
- 1 cup avocado oil
- Splash of apple cider vinegar
- Juice from half a lemon
- ¼ tsp salt
- ⅛-1/4 tsp mustard
Instructions
- Directions: First make your paleo mayo by adding all of the paleo mayo ingredients into a wide open mouth jar. Let it settle. Put an immersion blender or stick blender at the bottom of the jar and start blending. Once its thickens, slowly bring the stick blender to the top of the mixture.
- Directions for Chicken Salad: Put your almonds into a food processor and blend until powdery, yet chunky. Add all ingredients and most of the paleo mayo and season to taste. You can serve it on top of an avocado, sweet bell peppers, apple slices or a lettuce wrap.
