Why not eat some veggies for dessert?! These paleo sweet potatoe brownies are pretty amazing and it took me 4 batches to get it just right to share with you.
RECIPE: 2 cups mashed sweet potatoes (I baked mine at 450 for 1 hour until very soft) 2 eggs, 1 1/4 cup almond or cashew butter, 1/3 c maple syrup, 1/3 c coconut oil, 1 tsp vanilla, 1 tsp baking soda, 3 tbsp coconut flour, 3 tbsp coco powder.
Bake sweet potatoes and blend in blender with the coconut oil to make smooth, mix in the rest of ingredients and bake for 25-35 minutes at 350* in greased 9×13 pan. You can add chocolate chips if you want it more chocolatey or melt chocolate in sauce pan with some coconut cream for a chocolate ganache topping. It’s healthy so you can eat 5 at a time right?
