Paleo German Pancakes cooked in a skillet are the way to go, its crispy, it’s soft and it’s what dreams are made of. Hootenannys, German or Danish Pancakes…whatever you call them they are my fav. With simply swapping out a few ingredients it is easy to make them paleo!
RECIPE: 8 eggs + 3/4 c light canned coconut milk + 2 tbsp coconut flour + 1/2 tsp salt + 1/2 tsp cinnamon + 3/4 tsp vanilla. Combine ingredients and mix in blender or use immersion blender. Preheat oven at 425* and while preheating put skillet or pan in with 2-3 tbsp ghee or butter. Let melt be careful not to burn. Pour egg mixture into pan and bake for 20-25 minutes. Top with favorite topping and maple syrup if you feel like livin it up!
