Made this again for dinner tonight. (I’ll slowly be adding all the dishes I made from guest posting over @whole30recipes a couple weeks ago) It is so full of flavor and easy to make, especially if your chicken is already cooked. As I’ve said before butternut squash noodles are my favorite.
First cook chicken of desired method, I crockpot mine because i hate dry chicken. I added chicken breasts to crockpot along with an inch of whole30 compliant chicken stock and a tbsp of ghee. I seasoned it with my favorite, seasoning Adobo Seasoning cook on high for 3-4 hours and shred or cube. PESTO: 1/2 c nuts (I used half cashew and half pecan) 3-4 cloves garlic, 1/3 c olive oil blend up and then add 3 cups of fresh basil and blend until desired consistency, salt and pepper to taste. Butternut Squash Noodles: I peeled and then spiralized my butternut squash with my spiralizer and then steamed until tender. Top “noodles” with pesto, chicken, raisins and compliant sun dried tomatoes.
