My girls had a somewhat traumatic doctors visit today (just a check up my 3 year old is just dramatic) so I treated them to some healthy ice-cream. For a brief second I was tempted to drive through and grab a cone but my new wanna be healthier self thought, I can make ice cream at home in 2 minutes, probably FASTER than waiting in a drive thru. Win-win. My girls loved it and there was zero guilt feeding it to them before lunch.
3 cubes of frozen full fat coconut milk. A small amount of almond milk, 1 cup frozen nectarines, 1/4-1/2 frozen banana. Blend it up in your #blendtec or high powered blender of choice.
