Roasted Pepper & Chicken Salad with Sweet Cilantro vinaigrette. This was so amazingly good, easy and the dressing…so so good. I was going to make a cafe rio creamy cilantro dressing but I was lazy and didn’t feel like making mayo. Sometimes lazy really does pay off! 
Season chicken with adobo seasoning and bake. Or prepare however you wish. Roast up some peppers in a pan with a little bit of avocado oil. Combine with lettuce, tomato, avocado, red onions and cucumber. DRESSING: 5 oz of avocado oil, 1-2 oz rice vinager, 1 clove of garlic, 2 pitted dates, large handful of fresh cilantro. Blend in blender.
