Ingredients: 1/3 C Ghee or butter
3 Tbsp olive Oil
1 onion, minced
2-3 cloves of garlic, minced
2 c asparagus or green beans
1 diced red pepper
1 carrot grated
1 zucchini, chopped (or tomato)
2 c. chicken stock
2 tsp dried basil, or 1/2 c fresh basil chopped
1 spaghetti squash already cooked
green onions for garnish
salt & pepper
chicken already cooked (optional)
Saute butter and olive oil, the onion and garlic in large skillet add green beans, peppers, carrot and zucchini and cook until crisp tender (about 2 minutes) Increase temp and add chicken stock and basil and allow mixture to boil until liquid is slightly reduced (5 minutes) Stir in cooked spaghetti squash, chicken and green onions and cook for a few more minutes. S&P to taste.
