At some point next week I am doing a week of whole30. So of course I need to eat everything I can before I start. Ok I’m not THAT out of control… Let’s go crazy and make some clean banana oat muffins! I combined like 5 different recipes I found on Pinterest and voila!
Make 12 muffins. 2 ripe bananas, 3 tbsp of almond butter, 2 eggs 1/3 c applesauce, 1/3 c honey, 1 tsp baking soda, 1 tsp cinnamon, 1 tsp vanilla, pinch of salt, 1 c of oats. I put all ingredients in my @blendtec and hit batter. After all blended add 3/4-1 c of oats and stir in till similar thickness of muffin batter or pancake batter. Pour in lined tins and bake at 375* for 15-18 mins.
