I finally made some cauliflower crust pizzas and now I feel like a true Paleoite! It’s so simple and I found the trick is to get as much moisture out of the cauliflower as possible to get a more crispy crust.
RECIPE: Finely chop up 1 head of cauliflower in food processor. Microwave for 5-7 minutes until softened, place in clean dish towel or cheese cloth and squeeze as much moisture as you can out that cauliflower once it has cooled. Mix with 1 egg, 1-2 tsp coconut flour and seasonings of choice, like oregano, basil, salt and pepper. Bake at 425* for 15 minutes or until it looks cooked. Add toppings of choice. For my kids I did marinara, mozzarella and ham, for my paleo pizza I did pesto, red onion, sweet bell peppers and tomatoes.
