Blend eggs, coconut milk, flour, salt, cinnamon and vanilla together in a blender or use an immersion blender. Meanwhile melt ghee in 9x13 pan or cast iron skillet. Pour batter into pan and bake at 425* for 6 minutes, place sliced apples in center of batter and bake for another 20 minutes until done.
