Paleo Pumpkin Granola

Ingredients
  • 1 cup almonds
  • 1 cup pecans
  • 2 cups cashews
  • ½ cup pumpkin seeds
  • 1 cup raisins
  • 1 cup unsweetened shredded coconut
  • 2 tbsp pumpkin puree
  • ⅓ - ½ cup honey
  • 1½ tsp apple pie spice
  • ½ tsp salt
  • 1 egg white
  • 2 tbsp water
  • 3 tbsp coconut oil
  • 1 tsp vanilla (optional)
Instructions
  1. : Put almonds, cashew and pecans in a food processor or blender and pulse, you don't want it all to be a fine powder you want some chunks in there.
  2. : In a bowl add the egg white and water and beat well, add melted coconut oil, vanilla, honey, pumpkin puree and the spices and mix well.
  3. : Add in the processes nuts, seeds, raisins and coconut and mix well.
  4. : Bake at 300* for 30 minutes mixing every 10 minutes
  5. : Let cool and don't mix it for at least 10 minutes while it hardens
