Fall Salad with Clemantine Ginger Dressing

Ingredients
  • Spinach
  • 1 peach
  • 1 yellow squash
  • ½ avocado
  • 1 cup cherry tomatoes
  • ¼ slivered or chopped almonds
  • 1 clementine (cutie)
  • 1 tsp fresh grated ginger
  • 3 oz avocado oil
  • 1 oz apple cider vinegar
  • 1 pitted date
Instructions
  1. Put salad ingredients in a bowl. For the dressing, zest an entire clementine and put in blender with date, ginger, avocado oil, apple cider vinegar, and juice from 1 clementine. Blend.
