Mother’s Day Gift Guide

This is my tried and true meat thermometer, I use it on the grill or anytime I make chicken or pork so that it doesn’t get over cooked and chewy. You need it to be INSTANT or else it will keep cooking while the thermometer is sloooowly telling you how hot it is. Not with this baby! You can find this HERE.

Peppermint Sweet Potato Brownies
These sweet potato brownies are a great guilt free paleo dessert! (if you exclude the chocolate chips and peppermint candy canes) if not it is still pretty clean which is a success in my book, especially around christmas time! I changed the original sweet potato brownie a little bit by adding tapioca starch which made the texture even better, its not necessary but made a big difference and I obviously added peppermint. I hope you like it!
I think putting everything in the blender is one of the key parts in making sure that the brownies have the right texture, I use a blendtec, it is my very favorite blender that I have used! Click HERE to check it out.
- 2 cups mashed sweet potatoes
- 2 eggs
- 1¼ cup almond or cashew butter
- ⅓ cup maple syrup (or honey)
- ⅓ c coconut oil
- 1 tsp vanilla
- 1 tsp baking soda
- 2 tbsp coconut flour
- 3 tbsp of tapioca starch or an additional tbsp coconut flour
- 3 tbsp coco powder
- CHOCOLATE TOPPING
- 2 cups chocolate chips
- candy cane (optional)
- 1 cup coconut milk
- 2 tsp peppermint extract
- First poke holes in 2 large sweet potatoes and cover in foil and bake sweet potatoes at 450 for 1 hour or until very soft and blend in blender with the coconut oil till smooth. Mix in the rest of ingredients and bake for 25-35 minutes at 350* in greased 9×13 pan. You can add 1 cup chocolate chips if you want it more chocolatey. For the chocolate topping (optional) heat 1 cup dark chocolate chips with ⅔ cup light coconut milk and 2 tsp peppermint extract. Pour on top of baked brownies and let cool. Sprinkle crushed peppermint candy on top just before serving.
Sweet Potato Brownies
These paleo sweet potato brownies will trick even the pickiest of eaters into eating something pretty healthy! The problem with traditional sweets and brownies is that you are essentially eating empty calories, nothing with nutrition that is going to really count. With these sweet potato brownies you are getting all the healthy nutrients from the sweet potato, cashews and of course eggs! My kids love these and I always have the ingredients on hand in my pantry to make them.

You can add chocolate chips if you want it more chocolatey or melt chocolate in sauce pan with some coconut cream for a chocolate ganache topping.
STRAWBERRY MANGO ICECREAM
- 1 frozen banana cut into 4-5 chunks
- 1 cup frozen mango
- 2-3 frozen strawberries
- Light Canned Coconut Milk frozen in ice cube trays
- ⅛ c - ¼ c Coconut Milk or almond milk
- First you need to pour your coconut milk into ice cube trays and freeze them. Then add 3 cubes of your frozen coconut cubes to your blender (a blendtec twister jar works best) add the mango, strawberries, and almond milk or coconut milk to the blender and blend on ice cream mode. If you can't blend it keep adding small amounts of liquid at a time. Once it is done serve immediately or put in freezer briefly to set up.
Chocolate Macadamia NUT BUTTER
Who loves chocolate covered macadamia nuts?? Then this nut butter is for you! It’s so easy and delicious.
RECIPE: Roast 1 cup of macadamia nuts and 1 cup of cashews at 350* for 8-10 mins. Put 3-4 large pitted dates, 1 tbsp unsweetened cocoa powder, 1 tbsp coconut oil, pinch of salt and the nuts into your @blendtec twister jar and blend!
Fruit/Veggie Pops
Kid friendly fruit and veggie Popsicles. My little girls LOVED them, especially since they helped make them. I love giving them treats that are actually healthy!
RECIPE: MANGO ORANGE // handful of frozen mangos, small scoop of orange juice concentrate, 1/2 frozen banana, 1/2 scoop blendfresh orange powder and 1/2 cup of almond milk. Blend in blender.
SPINACH PINEAPPLE // 1 cup of pineapples, 1/2 frozen banana, 1 cup or more of spinach, 1/2 scoop of blendfresh orange powder and 1/2 c almond milk. Blend in blender and then pour separate mixtures into Popsicle molds and freeze. The blendfresh orange powder is filled with 12 different orange/yellow fruits and veggies which adds extra nutrients to our diet. Pineapple Mango Icecream
This might be my favorite way to sneak in extra fruits and veggies 😏 and my kids have no idea. 1 oz almond milk, 3/4 frozen banana , 1 c frozen pineapple, 1/2 c frozen mango and 1 scoop blendfresh orange powder. Blend in blendtec twister jar on ice cream setting.
Strawberry Vinaigrette
Homemade dressings are kind of my thing and I love making a custom dressing to fit a salad perfectly. This one like all of my others is simple and easy and was inspired by my friend Camilla. 4 oz avocado oil, 2 oz rice vinegar, juice from half an orange, 4 strawberries, 1 1/2 tbsp date syrup or 2 pitted dates. Blend in high powered blender like blendtec twister jar. I’ll be posting 2 salads I put this dressing on soon.

HOW TO MAKE SALAD DRESSINGS
This is hands down my FAVORITE salad dressing and everyone who tastes it is a huge fan! This is my sweet cilantro dressing and it is super simple to make. RECIPE: 5 oz avocado oil + 2-3 oz rice vinegar + 3 dates + 3/4 bunch cilantro. Blend in blender till smooth.
